1 cup grated coconut
2-3 green chilies
1-inch piece of ginger
1 tablespoon roasted chana dal
A handful of fresh coriander leaves

Water as required
For tempering:
1 tablespoon oil
1/2 teaspoon mustard seeds
A few curry leaves
1-2 dried red chilies
Instructions:

In a blender, add grated coconut, green chilies, ginger, roasted chana dal, coriander leaves, and salt. Blend until you get a coarse paste.
Gradually add water while blending to achieve the desired consistency. The chutney should be thick yet spreadable.
Transfer the chutney to a bowl.
In a small pan, heat oil for tempering. Add mustard seeds and allow them to crackle.
Add curry leaves and dried red chilies to the pan and sauté for a few seconds.
Pour the tempering over the chutney and mix well.
Coconut chutney is ready to be served with masala dosa.

Part 3: Sambhar:
Ingredients:

1/2 cup toor dal (split pigeon peas)
1 small onion, finely chopped
1 medium-sized tomato, chopped
1 small carrot, diced
5-6 French beans, chopped
1 small brinjal, diced
1/4 cup tamarind pulp
1 teaspoon sambhar powder
1/4 teaspoon turmeric powder
Salt to taste
For tempering:
1 tablespoon oil
1/2 teaspoon mustard seeds
A pinch of asafoetida
A few curry leaves
Instructions:

Rinse the toor dal and pressure cook it with water until soft and mushy.
In a large pot, add cooked dal, chopped onion, tomato, carrot, French beans, brinjal, tamarind pulp, sambhar powder, turmeric powder, and salt. Mix well.
Add water as required to attain the desired consistency.
Cook the sambhar on medium heat until the vegetables are tender and flavors are well blended.
In a separate pan, heat oil for tempering. Add mustard seeds and allow them to crackle.
Add asafoetida and curry leaves to the pan and sauté for a few seconds.
Pour the tempering over the sambhar and mix well.
Simmer the sambhar for a few more minutes.
Remove from heat and serve hot with masala dosa.
